My tribute to the South of India, where I grew up. Ready in under 40 minutes in one pot, add in cubed chicken thighs, a chopped tomato and the contents of this packet and relish this South Indian delicacy.
The spices are roasted by hand and ground together in the right proportions. This is on the medium to hot side given the use of black pepper and coriander - both of which are also considered to be "heat" generating and healing in their properties.
